Fudge Krispies

Who doesn’t love a Rice Krispies Treat? The classic cereal coated in marshmallow is always a win.

However… what if you coated that cereal in fudge? What if you made it so chocolaty good that all thoughts of marshmallow left your mind? Well then, you’d have Fudge Krispies!

This dessert is a quick, easy-to-make treat that will satisfy any sweet tooth around.

Fudge Krispies

  • 1 bag (11.5 oz) milk chocolate chips
  • 1 stick (½ cup) butter
  • ½ cup light corn syrup
  • 2 tsp vanilla
  • 1 cup confectioners sugar
  • 4 cups Rice Krispies

Coat a 9×13 cake pan with butter – this will keep the bars from sticking to the pan. Don’t be shy here… the candy will stick to the pan and make it extremely difficult to remove if you don’t give it a good layer of butter here. I like to soften a chunk of butter a bit and then use a napkin to really coat the pan, especially in the corners where little bits like to hang out and stick.

Combine the milk chocolate chips, butter and corn syrup in a medium saucepan. Stir the mixture over low heat until everything is melted and smooth.

Remove the pan from the heat and stir in the vanilla and powdered sugar. Mix it well, trying to avoid any big lumps – you’ll have few, just make sure there aren’t any large pockets of unmixed powdered sugar.

In a large bowl, carefully mix the cereal and chocolate mixture until the cereal is well coated.

Spread the cereal mixture even in the pan and press down with a buttered spatula.

Chill until firm, give it a couple hours to really set and make it easy to handle. Cut the treats into small square and store them in the fridge until ready to serve.
